In most regions, a tea bush needs three to five years to mature for harvest. The quality of tea is directly related to which particular leaves are selected for collection. The freshest upper leaves are appreciated for their taste, high content of nutrients and aromatic compounds. For the best varieties of white tea, only unopened kidneys are harvested. Usually only the top 2.5-7.5 cm plants are treated.
Collecting tea leaves is a laborious process. When the bud opens, the branch continues to grow and prepare for the emergence of new buds. Only the youngest shoots from the ends of the branches are collected – they are called a “flash”. Workers manually skillfully tear off the upper leaves and sometimes fresh buds, moving along the rows of tea bushes. As you move deeper into the tea field, you need to determine how many shoots can be collected from each bush.
